When on a low-carb diet, it can be tough to get your veggies in, let alone enjoy them. That’s why I love to air fry vegetables like my Air Fryer Acorn Squash — it adds a satisfying crunch while locking in their natural flavors.

These air fryer roasted vegetables are tender, crispy, and SO flavorful, thanks to my seasoning blend of Mediterranean flavors like oregano, garlic, and lemon. 

Coating the vegetables evenly in oil is the best way to achieve the perfect results. This will help ensure that every piece is evenly cooked and golden brown along the edges — similar to roasting.

And the cooking process couldn’t be simpler! Just prep your veggies, toss them in oil and seasoning, and let the air fryer work its magic. Serve these up as a delicious side dish alongside your favorite protein, or enjoy them as a tasty snack any time of day.

Here’s a look at the main ingredients you’ll need for this air fryer Mediterranean vegetables recipe:

  • Veggies: We used low-carb-friendly veggies like asparagus, zucchini, red bell peppers, and red onion. You can change this blend up however you like! 
  • Mediterranean-inspired seasoning blend: My seasoning blend consists of sea salt, black pepper, smoked paprika, garlic powder, dried oregano, and dried basil. It’s simple yet adds so much flavor to the tender vegetables.
  • Olive oil: The veggies are coated in a light layer of extra virgin olive oil to ensure they get crispy in the air fryer.
  • Feta in brine: The salty feta adds a tangy and creamy element to the dish. I like to get feta in brine as it tends to be more flavorful and moist.
  • Fresh flat-leaf parsley: The fresh parsley adds a pop of color and freshness to the finished dish.
  • Fresh lemon juice: A squeeze of lemon juice adds a bright and tangy flavor that complements the Mediterranean seasoning blend super well.

Substitutions & Additions

Since veggies are more neutral in taste, there are so many different ways to go about changing up the flavors in this dish! 

Swap any type of vegetables, such as eggplant, summer squash, cubed sweet potato or other root vegetables (if they meet your macro goals). Just note that some vegetables may take longer to cook than others, so adjust your cooking time accordingly. Veggies like sweet potatoes should be cut small so they don’t require a longer cooking time. 

How to Make Air Fryer Mediterranean Vegetables

The steps are simple, and I’m outlining them below, but be sure to scroll to the bottom of the page to view the full, printable recipe card!

STEP 1 – PREP VEGGIES

To start, prep and cut all your veggies according to the ingredient list. Make sure to cut them into similar sizes so that they cook evenly.

STEP 2 – SEASON

Next, arrange the vegetables in a single layer in the air fryer basket. Drizzle with olive oil, then mix the seasonings together and sprinkle them all over the vegetables. 

STEP 3 – AIR FRY

Once evenly coated, cook vegetables in the air fryer at 375°F for 11-14 minutes, tossing halfway through. 

STEP 4 – SERVE & ENJOY

Remove the Mediterranean roast vegetables and transfer them to a serving dish. Top with crumbled fetachopped parsley, and fresh lemon juice.

Tips for Best Results

  • If you’d like to add grape or cherry tomatoes, you can add them in halfway through the air fryer time to prevent them from bursting and making the vegetables soggy. They make a great addition to add some natural sweetness and a burst of color.
  • If you do not have a basket-style air fryer, simply toss all of the ingredients together in a large bowl and place them on the air fryer tray to cook. 
  • You can top these veggies with any of your favorite fresh herbs! Fresh oregano or chives would also taste divine.

Storage

These air fryer Mediterranean vegetables are best served fresh out of the air fryer. But if you have leftovers, store them in an airtight container in the refrigerator for up to 3 days

To reheat, simply pop them back in the air fryer for a few minutes until warmed through and crispy.

Ingredients

  • 6-7 asparagus spears, cut into 3-inch pieces
  • 1 zucchini, sliced into half-moon shape about 1/2”
  • 1 red bell pepper, cut into bite-sized pieces
  • 1/2 red onion, cut into wedges, then in half
  • 2 tablespoons olive oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • ¾ teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 cup feta in brine, crumbled
  • 2 tablespoons chopped, fresh flat-leaf parsley
  • 1 tablespoon fresh lemon juice

Instructions

  1. Toss veggies into the air fryer. Drizzle them with the olive oil.
  2. In a small dish, mix the seasonings together and then sprinkle all over the veggies. 
  3. Air fry at 375°F for 11-14 minutes, tossing halfway through. 
  4. Remove and transfer to a serving plate. Top with crumbled feta, chopped parsley, and a squeeze of fresh lemon juice.
