- No baking required — just mix and roll and enjoy your tasty treat!
Made with Wholesome Ingredients
Here’s a look at the main ingredients:
- All-natural almond butter: Packed with healthy fats and protein (via WebMD), almond butter is a great base for these bliss balls.
- Coconut oil: Another great source of healthy fats, coconut oil helps bind the ingredients together and adds a hint of tropical flavor.
- Vanilla extract: A dash of vanilla extract adds a sweet and aromatic flavor to these bliss balls.
- Keto-friendly syrup: I like Rx Sugar’s “maple syrup” for this recipe. It uses allulose, a keto-friendly sugar substitute that’s low in calories and does not impact blood sugar levels.
- Almond flour: A great alternative to traditional flour, almond flour is gluten-free and adds a nutty flavor to these bliss balls. I like to use Diamond Almond Flour. Make sure you’re using almond flour and not almond meal, as it’s much more coarse and will leave you with a crumbly texture.
- Shredded, unsweetened coconut: Adding coconut flakes to these bliss balls gives them a satisfying texture and just the right amount of sweetness.
- Cocoa powder: For that rich, chocolatey flavor!
- Chocolate protein powder (optional): If you want an extra boost of protein, feel free to add a scoop of your favorite chocolate protein powder.
- Fine sea salt: Just a pinch will enhance the flavors for that irresistable sweet and salty combo.
Substitutions
Sweetener: You can swap Rx Sugar’s “maple syrup” with liquid allulose or date syrup if you need a paleo version. If you prefer to use a granulated or powdered monk fruit sweetener (or another favorite sweetener that’s a 1:1 sugar substitute), use ¼ cup and add an additional 1-2 tablespoons almond butter.
Nut Butter: You can use any nut butter you like. Just know that cashew butter and peanut butter won’t be as low-carb-friendly.
Tasty additions: Feel free to mix in some chopped nuts, dried fruit, or even mini chocolate chips for added texture and flavor. If you want to turn these into keto energy balls, you can stir in more protein powder. This recipe is so easy to modify!
How to Make Chocolate Coconut Keto Bliss Balls
The steps are simple, and I’m outlining them below, but be sure to scroll to the bottom of the page to view the full, printable recipe card.
STEP 1 – MIX WET INGREDIENTS
In a large mixing bowl, combine the almond butter, coconut oil, vanilla, and sugar-free maple syrup. Mix well with a whisk.
STEP 2 – MIX DRY INGREDIENTS
Next, add the almond flour, ¾ cup shredded coconut, cocoa powder, sweetener, and protein powder (if using).
STEP 3 – COMBINE
Once you’ve got the wet and dry ingredients ready, combine them with a rubber spatula. Taste, then add extra sweetener if needed. The consistency should be similar to cookie dough, and the dough should stick when pressed together in a ball.
Pro tip: If it’s too dry, add extra spoonfuls of almond butter until it reaches the right consistency.
STEP 4 – ROLL YOUR BLISS BALLS
Spread the remaining ¼ cup of shredded coconut on a plate.
Use a small cookie dough scoop (preferably 1-½ tablespoons) to scoop out portions of the mixture. Use your hands to roll them into dense balls, then roll them in the shredded coconut, gently pressing it into the dough to help it stick.
STEP 5 – CHILL
Now it’s time to chill your keto bliss balls! Place each bliss ball onto a parchment paper-lined plate or small baking tray and refrigerate for at least 30 minutes. Serve and enjoy!
Pro Tips for Best Results
- Sweeten these keto balls to taste. Most chocolate protein powders have their own sweetness, so if you omit the protein powder, you may need to add a little more sweetener.
- For the best texture, make sure to use finely shredded coconut and almond flour.
- If your dough is too wet/sticky, add more almond flour. If it’s too dry/crumbly, add extra spoonfuls of almond butter until it reaches the right consistency.
Storage
Store these bliss balls in the refrigerator in an airtight container. They will keep well for up to 7 days. This is extra important as natural almond butter and coconut oil will “melt” at room temperature.
