Cottage cheese still holds the spotlight on social media, and with it comes cottage cheese flat bread. So naturally, I had to do my own taste test of a viral TikTok recipe, and… it was a total failure. Even so, I knew I could turn this viral recipe into something completely foolproof. 

With simple ingredients like eggs, basil, and sun-dried tomatoes to bring texture and tasty flavor,  this cottage cheese flatbread will become your new favorite vessel for sandwich wraps, pizzas, or just as a replacement for regular bread.

Cottage cheese is such a nutritious ingredient. It’s known for its protein content and is low-carb, gluten-free, and low-glycemic. With this quick flatbread, you’ll have a protein-packed lunch option that fits into your daily macros like a glove.

  1. Cottage cheese: I like to use Good Culture cottage cheese for the best texture and flavor, but any cottage cheese will work.

  3. Fresh basil: Adds a delicious and herbaceous taste to the flatbread.
  4. Sun-dried tomatoes in olive oil: These give the flatbread a burst of flavor and add moisture to the dough.

How to Make Cottage Cheese Flatbread

STEP 1 – PREHEAT OVEN

Preheat the oven to 350°F

STEP 2 – PROCESS COTTAGE CHEESE MIXTURE

In a small food processor, combine the cottage cheeseeggsfresh basil, and sun-dried tomatoes. Process really well until the mixture is smooth.

STEP 3 – ASSEMBLE

Next, line a small baking pan with parchment paper and spray it with avocado oil.

Pour the cottage cheese mixture onto the parchment paper and spread it into a thin layer in the form of a flatbread. 

Pro tip: Tap the pan on the counter to get rid of any air bubbles. 

STEP 4 – BAKE, COOL, & SERVE

Bake for 40 minutes until golden brown. Remove, then let it cool completely.

Slice and serve however you like!

FAQ

What’s the best cottage cheese for making your own flatbread?

Horse and Dragonfly and Good Culture cottage cheese are my go-tos! They’re flavorful and have a good ratio of liquid to curd. Trader Joe’s makes a good option, too.

Can I cook this in the air fryer?

I recommend sticking with the oven for this one, as it might come out smaller in the air fryer… but you can always give it a try!

What type of food processor did you use?

The Kitchenaid 3.5 cup food processor is my right-hand when blending everything from sauces to this Whipped Cottage Cheese! It’s compact, easy to clean, and gets the job done quickly.

I’ve enjoyed this cottage cheese flat bread with my Mediterranean Chicken Salad (pictured!). But I’ve also made it with a combination of avocado mayo, dijon mustard, shredded chicken (or rotisserie), baby spinach, red onion, more sun-dried tomato, and freshly shredded parmesan cheese.

The great thing about flatbread is its versatility! Here are a few other ideas for how to enjoy it:

  • Pizza: Tomato sauce, mozzarella cheese, pepperoni, you name it. The flatbread makes a great gluten-free pizza crust alternative.
  • Greek: Tzatziki sauce, sliced cucumbers, cherry tomatoes, feta cheese, and olives.
  • Mediterranean: Hummus, roasted red peppers, grilled chicken or falafel, and tzatziki sauce.
  • Caprese: Pesto, fresh mozzarella, tomato slices, and balsamic glaze.
