Preheat the oven to 350°F.
STEP 2 – PROCESS COTTAGE CHEESE MIXTURE
In a small food processor, combine the cottage cheese, eggs, fresh basil, and sun-dried tomatoes. Process really well until the mixture is smooth.
STEP 3 – ASSEMBLE
Next, line a small baking pan with parchment paper and spray it with avocado oil.
Pour the cottage cheese mixture onto the parchment paper and spread it into a thin layer in the form of a flatbread.
Pro tip: Tap the pan on the counter to get rid of any air bubbles.
STEP 4 – BAKE, COOL, & SERVE

Horse and Dragonfly and Good Culture cottage cheese are my go-tos! They’re flavorful and have a good ratio of liquid to curd. Trader Joe’s makes a good option, too.
I recommend sticking with the oven for this one, as it might come out smaller in the air fryer… but you can always give it a try!
