This high protein chicken soup recipe is inspired by the traditional "Marry Me Chicken Soup" and is very easy to recreate in your kitchen!

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 onion, finely diced
  • A few pinches of salt and fresh-cracked pepper
  • 1-½ tablespoons dried oregano
  • 1 pound diced, boneless and skinless chicken thighs (season them with salt, pepper, 1 tablespoon paprika, 1 tablespoon oregano)
  • 3-4 minced garlic cloves
  • ½ cup diced, sun-dried tomatoes marinated in olive oil
  • 3 tablespoons tomato paste
  • 1 tablespoon paprika
  • 1 cup heavy cream or whipping cream
  • 32-40 ounces chicken bone broth
  • 8 ounces Kaizen pasta, any shape
  • 3-4 ounces fresh baby spinach
  • 1-2 tablespoons fresh basil
  • For serving; fresh basil, parmesan and red pepper flakes

Instructions

    1. Bring a large pot to low-medium heat, add the olive oil, and then sauté the diced onion until translucent (a couple of minutes). Add a few pinches of salt, fresh cracked pepper, the oregano, and mix using a spatula.
    2. Bring the pot to medium heat and add the diced, seasoned chicken pieces. Add 3-4 minced garlic cloves, mix well, and let the chicken brown up, mixing regularly for about 8 minutes.
    3. Add in the diced marinated sund-ried tomatoes, tomato paste, paprika, and mix well for about 1-2 minutes. Add 1 cup of cream, 32-40 ounces of bone broth, then cover and bring to a simmer. This should take about 6-10 minutes.
    4. Finally, add your pasta of choice and cook according to the package instructions. I use my Kaizen Radiatori low-carb pasta (it's keto pasta and high protein with 20g protein a serving), and cooked the pasta for 5 mins total.
    5. About 2 minutes before the pasta is done, add in the fresh spinach (about 3-4 oz) and a small handful of fresh basil. Mix well, taste, and adjust. This is best served right away.
    6. Serve in bowls and top with shredded parmesan cheese, more fresh basil, and chili flakes.

Notes

If prepping this in advance, its best to leave the pasta out and add when reheating.
