I’m a sucker for a nice refreshing salad. Not only is this Mediterranean cucumber avocado salad SO satisfying, but its hearty and simple ingredients honestly make it great any time of year. 

It’s low carb, so you don’t have to stress about your macros, and it’s an easy recipe that you can prepare last minute. It really does check all the boxes!

Whether you decide to enjoy it for a light lunch or as a side to your family dinner, this salad is sure to impress. Plus, it’s a great way to incorporate more healthy fats into your diet with the addition of avocado and nuts. Trust me, you’re going to be obsessed.

The Ingredient List

  • Persian cucumbers: I like to use Persian cucumbers instead of regular cucumbers because they are crispier and have fewer seeds.
  • Avocados: Make sure you use perfectly ripe avocados for the best texture and flavor.
  • Fresh flat parsley: Parsley adds a nice herbaceous flavor to the salad.
  • Toasted walnuts: To give the salad a delicious crunch and nutty flavor, dry toast your walnuts in a pan for a few minutes.
  • Freshly crumbled feta cheese: Feta always tastes beta when freshly crumbled!
  • Lemon: I used both lemon juice and lemon zest to give the dressing a bright, fresh flavor.
  • Sumac: I can’t make a Mediterranean recipe without adding sumac! This tangy and slightly tart spice adds a unique flavor to the salad.
  • Oregano: Oregano is a staple in Mediterranean cuisine and adds a familiar, comforting taste.
  • Salt: Don’t underestimate the power of salt in bringing all the flavors together.
  • Olive oil: To make a simple and delicious dressing, use high-quality olive oil. Trust me, it makes a  difference!

Substitutions & Additions

Persian cucumbers: Mini cucumbers make a great substitute if you can’t find Persian cucumbers. And of course, an English cucumber is also a nice swap.  

Fresh parsley: If you’re not a fan of parsley, you can use fresh cilantro, dill, mint, or a combination of these herbs.

Toasted walnuts:  Pecans, almonds, or pine nuts make great substitutes for walnuts. It’ll still provide that crunch and nutty flavor you’re looking for.

Other tasty additions: Diced tomatoes, chickpeas, quinoa, grilled chicken, or shrimp are all great additions to this salad for a heartier meal!

How to Make Cucumber Avocado Salad

STEP 1 – PREP CUCUMBERS

To start, wash and dry your Persian cucumbers well. Then, cut off the ends, cut them in half, and cut them into thin half-moon slices. Add them to a salad bowl.

STEP 2 – PREP AVOCADOS

Next, cube up the avocados and add them to the bowl. If you want to keep the salad on the lighter side, go with just 1 avocado, but if you like larger chunks of avocado, go for 2!

STEP 3 – ADD FRESH HERBS

Grab a large handful of fresh flat parsley and super finely chop it. If you don’t like parsley, you can also use dill, mint, or a combination. Add it to the bowl.

STEP 4 – ADD NUTS & CHEESE

Then add the toasted and cooled walnuts and freshly crumbled feta cheese.

STEP 5 – GARNISH, TOSS, & SERVE

Now it’s time to add the finishing touches! Finish off your easy salad with lemon juice and zest, sumac, oregano (fresh or dried), two small pinches of salt, and a few drizzles of a really good olive oil.

Storage

  • 5-6 Persian cucumbers, sliced or cubed
  • 1 or 2 avocados, cubed
  • a large handful of fresh flat parsley, finely chopped
  • 1/2 cup toasted walnuts
  • 2-3 ounces freshly crumbled feta cheese
  • zest and juice of 1 medium lemon
  • 1 tablespoon sumac
  • 1 teaspoon oregano, fresh or dried
  • ​2 small pinches salt
  • a few drizzles of extra-virgin olive oil

Instructions

    1. Add the cucumbers and cubed avocado to a salad bowl.
    2. Grab a large handful of fresh flat parsley and finely chop it. If you don't like parsley, you can also use dill, mint, or a combination. Add it to the bowl.
    3. Add the toasted and cooled walnuts and freshly crumbled feta cheese.
    4. Then finish it off with the zest and juice of 1 medium lemon, sumac, oregano (fresh or dried), two small pinches of salt, and a few drizzles of a really good olive oil.
    5. Toss it well, then serve and enjoy!

Notes

Store any leftovers in an airtight container in the refrigerator for up to a day. The cucumbers release water after a while and the avocado will brown so this salad is best served immediately.
