- 2-½ teaspoons fine sea salt
- 1 teaspoon black pepper
- 1 tablespoon avocado oil
- 1/2 onion, chopped
- 5 cloves garlic, minced
- 1 cup beef stock
- 1 teaspoon garlic powder
- ½ teaspoon sumac
- 4 tablespoons butter, sliced into 1 tablespoons pieces
Garlic Feta Dipping Sauce (optional)
- 3 ounces feta cheese
- 1 clove minced garlic
- 3 tablespoons olive oil
- 2 tablespoons Greek yogurt
- salt and pepper, to taste
- fresh parsley, as garnish
Instructions
- Pat dry the steak pieces and season with salt and pepper. Add the oil to a large skillet, then sear for about 1 minute per side. Transfer to a plate.
- Add a splash of the broth to deglaze the pan, then cook it down for a minute. Add the diced onion to the skillet and cook for a couple of minutes. Pour all of the onion/broth mixture into the Crockpot with the onions. Add the meat, garlic, remaining beef broth, garlic powder and sumac. Top with the butter.
- Cook on Low for 4-6 hours or on high for 3-4 hours.
- To make the whipped feta dipping sauce, combine all of the ingredients (except for the parsley) in a food processor. Process until smooth. Add salt and pepper to taste.

Sirloin is my cut of choice since it turns into a tender steak bite when cooked on Low heat. If you want a higher quality cut, like New York or Ribeye, you can substitute it. For a more budget-friendly option, you can substitute for round steak.
