Boil water with lemon, bay leaves, salt, and peppercorns. Add shrimp and boil until orange, then transfer to ice water to stop cooking. Pat dry.

Mix truffle mayo, lemon juice, chili sauce, Worcestershire sauce, olive oil, salt, pepper, and vinegar in a bowl.
