Pulse red onion, garlic, pistachios, and parsley in a food processor for marinade. Mix marinade with ground beef, adding salt, paprika, cumin, sumac, and pepper; let marinate for at least 30 minutes, ideally 2-4 hours.
For yogurt sauce, mix Greek yogurt with salt, pepper, lemon juice, grated garlic, dill, and grated cucumber.
Grill halloumi cheese until golden. Assemble wraps by spreading cucumber yogurt on low-carb pitas, adding koftas, grilled halloumi, and toppings. Enjoy!
