Easy Keto Beef Taquitos Recipe
If you’ve been around long enough, you know that I love making low carb recipes “Animal Style.” This easy recipe is similar to my Low-Carb Taco Burger recipe, but instead of tacos, we’re making beef and cheese taquitos!
These little low carb wraps make for a great snack, an easy lunch recipe, or the perfect keto appetizer. Whether you follow a ketogenic diet or not, the whole family will be drooling over these. You can take my word for it!
The taquitos are cooked in the air fryer for ultimate quickness and convenience, and if you want to go all out, I recommend caramelizing some onions to place on top. With every bite, you’ll taste layers of beef, cheese, “Animal Style” sauce, fresh lettuce, tomatoes, and sweet relish. It’s the bomb.

- Ground Beef: This is the base of our taquitos, and it’s a great source of protein.

Variations and Substitutions
Ground Beef: These low carb taquitos would taste great with a variety of fillings. Use chicken and make a keto chicken taquito recipe, or if you prefer another cut of beef, you can use cubed steak as well.
Cheddar Cheese: Want to switch up the cheese? Swap cheddar for American cheese slices. Or, you can use a blend of different shredded cheeses.
Greek Yogurt: If you don’t have Greek yogurt, use sour cream instead. It’ll taste just as good! We used Greek yogurt to add a bit more protein to the meal.
Other Topping Ideas: Feel free to add any other toppings that you enjoy on your taquitos, such as jalapeños, diced avocado, lime juice, or even bacon bits. Follow your stomach on this one!
How to Make Low-Carb Beef Taquitos
The steps are simple, and I’m outlining them below, but be sure to scroll to the bottom of the page to view the full, printable recipe card. You can also watch how it comes together in my Instagram reel!
STEP 1 – SEASON BEEF
Season your ground beef with a couple pinches of salt, fresh cracked pepper, and onion powder. Mix well. We will use about 2 to 2-1/2 ounces of this for our taquitos.
STEP 2 – PREP TAQUITOS
Next, grab your favorite low-carb tortilla, and press 2 ounces of ground beef on top of it to cover almost half of the tortilla.
Pro Tip: Make sure you press the ground beef until it’s super thin so the taquitos are easy to roll.
Top with 1 slice of thin cheddar cheese, and roll each tortilla into taquitos (you should have about 8-10 taquitos). Then, spray the taquitos with avocado oil and pop ’em into your air fryer at 400°F for 10 minutes.
STEP 3 – PREP TOPPINGS
While your beef taquitos are cooking, you can prepare the toppings: shred the lettuce and dice up the tomato and onion.
STEP 4 – CARAMELIZE ONIONS
Add butter to a pan on medium-low heat. Then add the onion and a couple pinches of salt. Stir frequently until they are caramelized. Be patient, it’s worth it!
Pro Tip: I like to add about 2 teaspoons of balsamic here to help it get a nice color. When done, turn off the heat and set it to the side.
STEP 5 – MAKE SAUCE
Mix together the Greek yogurt (or mayo), unsweetened ketchup, white vinegar, monk fruit sweetener, smoked paprika, and relish. Mix well, taste, and adjust.
STEP 6 – ADD TOPPINGS & SERVE
After 10 minutes in the air fryer, open the air fryer, top the taquitos with 1/4 to 1/2 cup shredded cheese, then put them back in the air fryer for about 1-2 minutes or until the cheese is melted.
Remove the taquitos, and top with lettuce, tomato, caramelized onions, and the sauce. Grab extra napkins and devour.

Are low carb tortillas really keto-friendly?
When on a low-carb diet, it can be challenging to know what brands to trust. With my Kaizen lupin flour, you can be sure to have a keto-friendly option with only 4 grams of net carbs per tortilla.
However, if you want to stick with a store-bought option, make sure to check the carb content and percentage listed on the nutrition label. Not all low-carb tortillas are created equal, and some may not be suitable for a strict keto diet. Also, keep in mind that not all store-bought low-carb tortillas are gluten free.

Ingredients
- 1 pound ground beef
- 4 pinches of salt, divided
- fresh cracked pepper, to taste
- 2 teaspoons onion powder
- 8 to 10 low-carb tortillas (store-bought or homemade)
- 8 to 10 thin slices of cheddar cheese
- avocado oil spray
- lettuce, shredded
- 1 tomato, diced
- 1 large yellow onion, diced
- 1 to 2 tablespoons butter
- 2 tablespoons balsamic vinegar
- 2 tablespoons plain Greek yogurt
- 2 tablespoons unsweetened ketchup
- 1 to 2 teaspoons white vinegar
- 1/2 teaspoon granulated monk fruit sweetener
- 1/2 teaspoon smoked paprika
- 1 tablespoon relish
- 1/4 to 1/2 cup shredded cheese
Instructions
- Season the ground beef with a couple pinches of salt, fresh cracked pepper, and onion powder. Mix well. You will need about 2-2.5oz of this for each taquito.
- Grab your favorite low-carb tortilla, and press down 2 ounces of ground beef to cover almost half of the tortilla (IMPORTANT: you want this to be pressed super thin). Top with 1 slice of thin cheddar or American cheese.
- Roll them up and spray them with Avocado oil. Pop into your air fryer at 400°F for 10 minutes.
- Shred some lettuce and dice the tomato and yellow onion. Add butter to a pan on medium-low heat. Add the onion and a couple pinches of salt. Stir frequently until they are caramelized.
