- Olive oil: This provides the perfect base for roasting the garlic.
- Garlic cloves: I used 20 fresh garlic cloves. You can use more, or you can use less. I felt I could have added about 4-5 more cloves to make it even more garlicky, but you do you!
- Dried thyme: One of the best dried herbs for adding a lovely earthy flavor to the dip.
- Fresh labneh cheese: Labneh is made from straining yogurt and has a thick, creamy texture similar to cream cheese. It adds tanginess to the dip and helps create the perfect creamy consistency.
- Feta cheese: This salty cheese adds a tangy and creamy twist to the dip.
- Fresh dill: Fresh herbs like dill provide a refreshing and herbaceous flavor that pairs perfectly with the roasted garlic and feta.
- Toasted pine nuts: These add a nutty and crunchy element to the olive oil dip, adding texture and depth of flavor.
Substitutions
Labneh cheese: Instead of labneh, you can use cream cheese or Greek yogurt for a similar creamy texture.
Fresh dill: If you don’t have fresh dill, dried dill will work in a pinch. Just use about half the amount.
Pine nuts: For a nut-free option, omit the pine nuts or substitute them with toasted sunflower seeds or chopped almonds.
How to Make an Easy Roasted Garlic Dip Recipe

STEP 1 – ROAST GARLIC
First, grab an oven-safe dish and add the olive oil. Next, toss in 20 (or more/less) cloves of garlic, dried thyme, sea salt, and mix. Put in the oven at 400°F for 30-40 minutes. Time varies by oven, but you want them to be nice and golden brown.
Remove garlic from the oven, and let cool COMPLETELY. This Is critical! Once the garlic has cooled, separate the cloves from the oil and keep the oil for later.
STEP 2 – MAKE DIP
Grab your food processor, then add the garlic cloves at the bottom. Add fresh labneh cheese, feta cheese, and a small handful of fresh dill.
Pro Tip: Don’t overdo it on the fresh dill. Use a small handful to start, and if you want to add more, you can. You want the garlic to shine here and for the dill to help bring some freshness, not take it over.
If you’re feeling particularly adventurous, you can add other seasonings like sumac, thyme, zaatar, or pepper, but keep it light first to really taste the original recipe.
Pulse a few times, taste, then adjust as needed. The feta has a decent amount of salt, so it shouldn’t be necessary, but you’re welcome to add it after you taste it.
STEP 3 – ASSEMBLE & SERVE
To serve, grab a medium bowl, then add the spread at the bottom. Top with the oil remaining from the roasted garlic, then add a couple tablespoons of toasted pine nuts, 1 tablespoon fresh dill, some crushed fried garlic (optional), crumble some more feta on top, and ENJOY!
Serving Suggestions
You can use this as a spread, as an entire dip, or just devour by the spoonful. As for dippers, the options are endless! The rich flavor of this dip would taste fantastic on anything from crusty bread to pita chips or crackers.

Storage
Store any of this leftover roasted garlic dip recipe with feta in an airtight container and store in the fridge for up to 3 days.
We do not recommend freezing this recipe, as it’ll alter the taste and texture of the dip.

- 9 ounces fresh labneh cheese
- 7-8 ounces feta cheese, divided
- 1 tablespoon plus a small handful of fresh dill, divided
- optional spices: sumac, thyme, zaatar, or pepper, to taste
- 2 tablespoons toasted pine nuts
- crushed fried garlic (optional)
