INGREDIENTS
For the Salad:
- 1/2 head cauliflower, processed into snowflake-like granules (do not use pre-riced)
- 3–4 Persian cucumbers, finely diced
- 1 cup cherry or grape tomatoes, halved
- 2 cups arugula, roughly chopped
- 1 large handful fresh flat-leaf parsley, finely chopped
- 1/4 red onion, finely diced
- 1 avocado, cubed
- 1/3 cup roasted pistachios, finely chopped (or walnuts/pine nuts)
- 2–3 oz crumbled feta
For the Dressing:
- 1/4 cup good quality olive oil
- Zest and juice of 1 lemon
- 1 heaping tsp Dijon mustard
- 1–2 garlic cloves, finely minced
- 1–1.5 tbsp fresh oregano, finely chopped
- 1 tsp Aleppo pepper or chili flakes
- Pinch of sea salt and fresh cracked black pepper
DIRECTIONS
- Add raw cauliflower florets to a food processor and pulse until it resembles snowflakes — light, fluffy, and super fine. Transfer to a large mixing bowl.
- To the bowl, add diced cucumbers, halved tomatoes, chopped arugula, parsley, red onion, and avocado chunks. Mix gently.
- Fold in chopped pistachios and crumbled feta. Adjust quantities to taste.
- In a mason jar, combine olive oil, lemon zest and juice, Dijon, garlic, oregano, Aleppo pepper, salt, and pepper. Seal and shake until well combined. Taste and adjust.
